Grab and Go After School Snack

We are two months in to school, and life is starting to get crazy. All of my kids are involved in multiple after school activities, and I teach piano lessons after school four days a week.  Yikes!

Because we are always running SOMEWHERE, yummy and filling snacks are a must for us.

When I was in high school, I attended an early morning church class called Seminary.  My good friend Laura used to bring breakfast along with her.  She almost always had Apple Jacks and a lemon-lime soda.  (Don’t cringe, parents!)

Since Apple Jacks are made with fiber and whole grain, plus that yummy cinnamon apple taste, I decided to use them as a base for my Grab and Go snack recipe in honor of my friend.

I came up with this idea when I was shopping at Target and noticing how many varieties of snacks they had in the grocery aisles!  You can purchase all these ingredients there.  (So I walked out with throw pillows and some Halloween candy, too.  It’s Target).

You will need:

Apple Jacks

Freeze-dried Strawberries

Dried Banana Chips

Fruit and Granola clusters

1.  Place 1 cup of Apple Jacks in a bowl.

2.  Add 2 tbsp each of Strawberries, Banana Chips, and Fruit/Granola clusters.

3.  Mix to combine well.

4.  Place in a baggie and fasten for a secure snack you can throw in their bag or line up in your pantry.

* Recipe size is a generous serving.  Reduce for smaller kids/appetites.

This is super-filling and delicious!  I love the combination of the fruit flavors.  Feel free to try your favorite fruits, or even add nuts or yogurt-covered raisins.
